I spent the weekend welcoming and embracing the idea of summer with both arms. A day on the water kayaking between tall trees and rocky beaches. An evening spent barbecuing with friends and eating frozen desserts from our youth. An afternoon swimming and reading at the lake. I’m so ready to spend all of my weekends this way. In fact, I’ve compiled quite a list of things I hope to do this summer. From the adventurous (hot air ballooning, surfing, backpacking, hot springs), to destination (Yosemite, Vancouver, Seattle, Santa Barbara, Big Basin), to the everyday (hula hooping, drive-in movies, baseball games, bike rides). I look forward to filling up on berries, stone fruit and melons. To feeling the warm breeze, soaking in the sun, and spending more time outside than inside. To driving with the windows down and cranking up the music. I’m coining this the summer of powerful lady jams so be on the lookout for strong women and empowering lyrics on the sidebar. But most of all I’m ready for the sense of refresh and renewal that summer brings. A certain lightness fills the air and suddenly all of the tribulations of life seem to melt away. Here’s to summer starting a few weeks early, not a minute too soon.

Cherry Walnut Salad

A simple summer salad featuring a cherry walnut vinaigrette.

Instructions

  1. Rinse and dry the greens then place in a large bowl.
  2. Gently toast the walnuts in a small pan over medium-high heat. Add to greens
  3. Toss in sliced radishes and cherries.
  4. Mash cherries, then add vinegar, oils, salt and pepper and shake to mix.
  5. Toss salad with dressing and serve.

Ingredients

2 cups
arugula
2 cups
baby spinach
1/3 cup
walnuts, toasted
5
radishes, sliced thin
1 handful
of cherries, pitted and diced
Dressing
¼ cup
cherries, pitted and mashed
1 tbs
apple cider vinegar
2 tbs
extra virgin olive oil
1 tbs
walnut oil
¼ tsp
salt
¼ tsp
black pepper
