Almond, Chia and Quinoa Dark Chocolate Bar

Almond, Chia, Quinoa Dark Chocolate Bar - The Sunday Table (6 of 6)

“Life is about love. It’s about whom you love and whom you hurt. Life’s about how you love yourself and how you hurt yourself. Life’s about how you love and hurt the people close to you. Life is about how you love and hurt the people who just cross your path for a moment. Life is about love.” — Matthew Kelly

I like my chocolate bars with lots of chunky goodness in them. Making them at home means quality ingredients and the perfect chocolate to chunk ratio.

Instructions

  1. Line a bread pan with parchment paper. Cut parchment just larger than the pan so it covers the base and part of the sides. Press into shape.
  2. Combine almonds, quinoa and chia seeds in a small bowl.
  3. Melt the chocolate in a double boiler. Once melted, stir in the coconut oil. Then pour 3 tablespoons of the chocolate into the almond mixture bowl and stir until thoroughly coated.
  4. Pour a thin layer of chocolate into the prepped pan and spread into an even layer. Then evenly distribute the almond layer into the bottom of the pan. Then pour the remainder of the chocolate evenly over the top. Sprinkle the top with sea salt and then refrigerate for 1-2 hours before serving. Keep in the refrigerator.

Ingredients

¼ cup
raw almonds, roughly chopped
¼ cup
puffed quinoa
1 tbs
